Sweet potato bread
Ingredients/Components
- sugar
- cinnamon
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- flour
- water - 1/3 c
- nutmeg
- baking soda - 1 tsp
- vegetable oil - 1/2 c
- raisins - 1/2 c
- cold mashed sweet potatoes - 1 c
How to make sweet potato bread:
In a mixing bowl, beat eggs, sugar, oil and water at medium speed. Add vanilla. Combine dry ingredients; stir into egg mixture just until moistened. Stir in sweet potatoes, raisins and nuts. Pour into 2 greased 5 1/4 x 3 3/4-inch coffee cans. Bake at 350° for 55 to 60 minutes or until bread tests done. Cool 10 minutes on a wire rack. Remove from cans.
