Onion zucchini bread
Ingredients/Components
- flour - 3 c
- chopped onion - 3/4 c
- grated Parmesan cheese, divided - 1/2 c
- baking powder - 5 tsp
- salt - 1 tsp
- baking soda - 1/2 tsp
- buttermilk - 1 c
- vegetable oil - 1/3 c
- eggs, lightly beaten - 2 item
- finely shredded zucchini - 3/4 c
How to make onion zucchini bread:
In a bowl, combine flour, onion, 6 tablespoons Parmesan cheese, baking powder, salt and baking soda. In a small bowl, mix buttermilk, oil, eggs and zucchini. Stir into flour mixture just until blended. Spoon into greased 9-inch round baking pan. Sprinkle with remaining Parmesan. Bake at 350° for 40 minutes.
