Sweet potato biscuits
Ingredients/Components
- salt - 1 tsp
- buttermilk - 3/4 c
- baking powder - 2 tsp
- baking soda - 1/2 tsp
- light brown sugar - 2 Tbsp
- melted butter or margarine - 1/2 c
- mashed, cooked sweet potatoes - 3/4 c
- sifted, all-purpose flour - 2 c
How to make sweet potato biscuits:
Preheat oven to 400°. Sift together flour, baking powder and salt. Combine brown sugar, melted butter and sweet potatoes in small bowl. Beat until fluffy. Stir soda into buttermilk. Combine all ingredients. Stir only until moist. Turn out on floured board. Knead slightly. Roll out and cut into biscuits. Bake on ungreased baking sheet for about 20 minutes or until done.
