Zucchini relish
Ingredients/Components
- sugar - 6 c
- cinnamon - 1/2 tsp
- salt - 5 Tbsp
- cornstarch - 1 tsp
- vinegar
- cloves - 1/4 tsp
- allspice - 1/2 tsp
- dry mustard - 1 tsp
- Worcestershire sauce - 2 Tbsp
- apple cider vinegar - 2 Tbsp
- onions, chopped - 4 c
- black pepper - 1/2 tsp
- celery seed - 2 tsp
- green pepper, chopped - 1 item
- tomatoes - 2 c
- turmeric - 1 tsp
- red pepper, chopped - 1 item
- box Sure-Jell - 1 item
- zucchini, ground with rind - 10 c
- Dole crushed pineapple - 8 oz
How to make zucchini relish:
Cook first 3 ingredients until Sure-Jell is dissolved, then add remaining ingredients. Boil 4 minutes and pour into sterilized jars and seal. Yield: About 4 pints.Recipe categories: Squash, Condiments, etc., Zucchini.
