Ingredients/Components

  • cornstarch - 3 Tbsp
  • cold water - 3/4 c
  • ground ginger - 1/8 tsp
  • soy sauce - 3 Tbsp
  • can sliced water chestnuts, drained - 1 oz
  • light brown sugar, firmly packed - 1/3 c
  • medium green pepper, cut into chunks - 1 item
  • lemon juice from concentrate - 1/3 c
  • can pineapple chunks, drained reserve juice - 1 oz
  • medium raw shrimp, peeled and deveined - 1 lb

How to make sweet and sour shrimp:

In large, heavy skillet, combine reserved pineapple juice, water, lemon juice, sugar, cornstarch, soy sauce and ginger. Cook and stir over medium heat until thick and clear. Add shrimp; cook 3 minutes. Add remaining ingredients except rice; heat through. Serve with rice. Refrigerate leftovers. Yield: 4 servings.
