  • water - 1/2 c
  • vinegar - 1/4 c
  • orange juice - 2 Tbsp
  • small red onion, thinly sliced - 1 item
  • oranges, sectioned - 3 item
  • grated orange peel optional - 1/2 tsp
  • envelope non-fat salad dressing mix - 1 item
  • torn spinach about 8 oz - 8 c
  • slices turkey bacon, cut into 1-inch pieces, cooked - 6 item

How to make sunshine spinach salad:

Prepare salad dressing mix with vinegar, orange juice and water as directed on envelope, substituting orange juice for the 2 tablespoons water and adding orange peel. Mix spinach, orange sections, onion and turkey bacon in large bowl. Add dressing; toss lightly. Serve immediately. Makes 6 servings.
