Ingredients/Components

  • garlic powder - 1/4 tsp
  • hamburger meat - 2 lb
  • Accent - 1 Tbsp
  • onion powder - 1/2 tsp
  • liquid smoke
  • coarse pepper - 1 Tbsp
  • Morton Tender Quick curing salt - 2 Tbsp

How to make summer sausage:

Mix all together, roll in foil and refrigerate 24 hours. Bake at 300° for 1 1/2 hours in a pan at a tilt, with one end of foil open so it can drain. Take out of foil and bake 5 to 10 minutes more to dry. Refrigerate and slice.

Also can use minced grated onion instead of onion powder. Can use grated fresh garlic. Can roll sausage roll in coarse pepper before cooking.
