  • sugar - 3 Tbsp
  • vanilla - 1 tsp
  • flour - 2/3 c
  • confectioners sugar - 1/4 c
  • heavy whipping cream - 1 c
  • strawberries 2 1/2 c - 1 pt
  • ready to fill sponge cake roll - 1 item
  • Take whipped cream or Cool Whip, mix with 3 tablespoons of sugar

How to make strawberries and cream roll:

Take sliced strawberries and mix with sugar. Take whipped cream or Cool Whip, mix with 3 tablespoons of sugar. Spread on cake roll. Place strawberries on whipped cream. The cake roll will be rolled the same way you rolled it when warm. Refrigerate for 24 hours. Ice across the top with whipped cream and decorate with sliced strawberries. Add mint leaves for color. Cut like a jelly roll and serve.Sponge Cake Roll:4 large eggs2/3 c. sugar1 tsp. vanilla2/3 c. flour1/4 c. confectioners sugar Preheat oven to 350°. Grease cookie sheet, line with waxed paper, grease paper. Beat eggs and sugar 8 to 10 minutes until thick. Add vanilla. Fold in flour with a spatula and stir until blended. Spread on pan. Bake 13 to 15 minutes. Cool. Lay a cloth on counter. Sprinkle with confectioners sugar. Invert cake on towel and remove from pan. Peel off waxed paper. Roll up cake and towel. Cool completely. Unroll and fill with strawberry mixture. Reroll and serve.
