Ingredients/Components

  • half and half - 1 c
  • sour cream - 1 c
  • flour
  • nutmeg - 1/2 tsp
  • lemon juice - 1 Tbsp
  • paprika - 1 item
  • cloves garlic, minced - 2 item
  • Parmesan cheese - 1/2 c
  • salt and pepper to taste - 1 item
  • olive oil - 1/4 c
  • fresh mushrooms, sliced - 8 oz
  • 10 oz - 2 pkg
  • bunch green onions, minced - 1 item
  • cans artichoke hearts, chopped - 2 item

How to make spinach and artichoke casserole:

Preheat oven to 350°. Butter 1 1/2 to 2-quart casserole. Heat oil in large skillet over medium-high heat. Add garlic and green onions; saute until softened, about 2 minutes. Add mushrooms and continue to saute 5 minutes. Stir in half of artichokes and the spinach. Cook until warm, about 3 minutes.

Sprinkle flour over contents of skillet and cook, stirring constantly, for 1 minute. Season with nutmeg, lemon and salt and pepper. Put mixture in casserole dish and top with remaining artichokes. Blend together sour cream and Parmesan cheese. Spread over casserole. Sprinkle with paprika. Bake 35 to 40 minutes, until bubbly.
