Spiced carrot cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 4 item
- pkg - 1 lb
- salt - 1 tsp
- baking powder - 2 tsp
- all-purpose flour - 2 c
- salad oil - 1 c
- finely shredded raw carrots - 2 c
- cream cheese, softened - 1 pkg
- pure vanilla extract
- chopped pecans, divided - 2 c
How to make spiced carrot cake:
Sift together flour, cinnamon, baking powder and salt. In a large bowl of an electric mixer, beat sugar and salad oil for 2 minutes. Beat in one egg at a time, beating thoroughly after each addition. Add flour mixture, beating just until blended. Mix in carrots and 1 cup of the pecans. Pour into two greased waxed paper lined 9-inch cake pans. Bake in preheated oven at 350° for 35 to 40 minutes.Frosting: Beat cream cheese until light. Stir in powdered sugar and vanilla extract. Frost cake. Sprinkle remaining 1 cup of pecans on sides of cake. Garnish top with pecan halves, if desired.
