Spanish rice
Ingredients/Components
- Velveeta cheese - 1/4 lb
- salt and pepper to taste - 1 item
- Minute rice - 3 c
- bacon - 1 lb
- canned tomatoes - 1 qt
How to make spanish rice:
Cook bacon until crisp, then crumble or cut into small pieces before cooking and cook until well done. Cook Minute rice according to directions on box. Put tomatoes and 1/2 of cheese (cut in small pieces) in a 9 x 13-inch cake pan. Add bacon pieces and rice. Stir until well mixed. Add rest of cheese, cut in small pieces, and salt and pepper to taste. Bake at 350° for 45 minutes to 1 hour or until slightly browned on top.Recipe categories: Low protein, Low fat, Side dish.
