Spanish rice
Ingredients/Components
- sugar - 1/2 tsp
- salt - 1/8 tsp
- water - 3/4 c
- pepper - 1/8 tsp
- clove garlic, minced - 1 item
- chili powder - 1/2 tsp
- long grain rice - 1/2 c
- few dashes bottled hot pepper sauce - 1 item
- chopped onion 1 medium - 1/2 c
- can low sodium tomatoes, cut up - 1 1/2
- chopped celery 1 stalk - 1/2 c
How to make spanish rice:
In a large skillet, stir together the water, onion, celery and garlic. Bring to boiling; reduce heat. Cover and simmer for 2 minutes or until the vegetables are tender. Do not drain. Stir in the undrained tomatoes, rice, sugar, chili powder, salt, pepper and hot pepper sauce. Return to boiling; reduce heat. Cover and simmer for 20 to 25 minutes or until the rice is tender and most of the liquid is absorbed. Yield: 4 servings.Recipe categories: Low protein, Low fat, Side dish.
