Ingredients/Components
- lb frozen baby corn - 1 item
- can 24 oz black beans, drained and rinsed - 2 item
- medium green bell or yellow pepper, chopped - 1/2 item
- medium red onion, minced - 1/2 item
- c cilantro, minced - 1/4 item
- c balsamic vinegar - 1/4 item
- c water - 1/4 item
- T extra virgin olive oil - 2 item
- t salt - 1/4 item
- T sugar - 2 item
- t garlic salt - 1/4 item
How to make southwest salad:
In a large bowl, combine frozen corn, beans, pepper, onion and cilantro. In a small jar make marinade; mix vinegar, oil, water and seasonings. Pour over the bean/corn mixture, toss to blend and coat.
