Ingredients/Components
- can black beans, rinsed and drained - 1 oz
- frozen corn, thawed
- chopped plum tomatoes
- thinly sliced green onions - 3/4 c
- minced fresh cilantro - 1/3 c
- oil - 1/2 c
- lemon juice - 1/2 c
- salt - 2 tsp
How to make southwest salad:
Toss together first 5 ingredients in a bowl. Whisk together oil, lemon juice and salt; pour over black bean mixture, stirring gently to coat. Cover and chill at least 8 hours. Serve at room temperature or chilled.Recipe categories: Salads, Salad dressings, Main dish.
