South of the border casserole
Ingredients/Components
- pkg - 1 oz
- carton sour cream - 1 oz
- ground beef - 1 lb
- shredded Cheddar cheese - 1/2 c
- oregano - 2 tsp
- cans tomato sauce - 2 oz
- finely chopped onion - 1/2 c
- can diced green chilies - 4 oz
How to make south of the border casserole:
Brown beef and onion for 8 to 10 minutes; drain. Add tomato sauce, chilies and oregano. Cook over low heat for 10 minutes and remove from heat. In a greased 2 1/2-quart casserole, layer 1/2 the chips (4 ounces), Monterey Jack cheese, cut in 1/2-inch cubes and beef mixture. Repeat layers. Bake 20 to 25 minutes. Remove from oven. Top with sour cream and sprinkle on Cheddar cheese. Return to oven for 3 to 5 minutes to melt cheese.For a low-fat recipe, substitute ground turkey for beef and plain yogurt for sour cream. It is just as tasty.
