  • salt - 1 tsp
  • butter - 1 item
  • soda - 1/2 tsp
  • baking powder - 2 tsp
  • vegetable oil - 1/4 c
  • flour, divided
  • sourdough starter - 2 rounded

How to make sourdough bread:

Place sourdough starter in large bowl. Sift in baking powder, soda and salt. Add vegetable oil and mix well. Flour board with 1/2 cup flour and put remaining flour into sifter. Gradually add flour from sifter, and blend after each addition. When mixture begins to hold together well, grease hands and turn mixture out onto board. As you add remaining flour, knead it in a rhythmic fashion.

To knead, press mass of dough flat with the heels of your hands; fold to center. Then repeat process of pressing and folding dough rhythmically. When dough begins to feel elastic after about 5 minutes, slap dough with the full palms of the hands to press out gas bubbles, then stretch it into an oblong piece. Fold long sides under first, and tuck ends under. Place dough, folded sides down, in a greased loaf pan. Brush top of loaf with melted butter or dot with butter in several places. Cover with waxed paper and a clean dish towel, and place on stove top where it is warm.

Let rise in pan until doubled in bulk; the dough should completely fill the pan and be rising above it. This takes 2 1/2 to 3 hours depending on the warmth of the kitchen. Bake in a preheated 400° oven for 20 to 25 minutes or until golden brown. Cool on a wire rack. Yields 1 (9 x 5 x 3-inch) loaf.
