Ingredients/Components
- sour cream - 1/2 c
- grated Cheddar cheese - 2 c
- green onion - 1/2 c
- cans cream of chicken soup - 2 item
- or 2 cans Ortega green chilies, chopped - 1 item
- Filling:1/2 to 1 whole stewed chicken
How to make sour cream enchiladas:
Combine ingredients for sauce and heat until smooth.Filling:1/2 to 1 whole stewed chicken2 c. grated Cheddar cheese1/2 c. green onion Mix filling well. Take 1 1/2 dozen flour tortillas (room temperature) and spread a large spoonful of cheese-chicken mix and a spoon of "sauce." Roll tortillas and place in pan. Pour remaining sauce over all.
