Ingredients/Components
- salt - 1/4 tsp
- baking soda - 1 tsp
- large eggs - 2 item
- cream of tartar - 2 tsp
- sifted all-purpose flour
- 2 sticks unsalted butter - 1 c
- sugar plus 1/4 c
How to make snickerdoodles:
Combine the flour, cream of tartar, baking soda and salt and sift again. Set aside. Cream the butter and sugar until fluffy, about 3 minutes. Add the eggs, 1 at a time, beating well after each addition. Add the flour mixture in 4 parts and beat thoroughly, after adding each part. Wrap dough in plastic wrap and refrigerate for at least 1 hour. Preheat oven to 400°. Roll dough into balls about the size of a walnut, then roll each in the sugar-cinnamon mixture. Place about 2 inches apart on an ungreased cookie sheet. Bake for about 8 to 10 minutes, or until just lightly browned, but still soft.
