  • catsup - 2 Tbsp
  • salt and pepper - 1 tsp
  • stalk celery, chopped - 1 item
  • tomatoes, cut in eighths - 2 item
  • fresh or frozen onion - 1/4 c
  • 3 medium zucchini, quartered lengthwise, then cut into 1/2-inch pieces - 1 lb

How to make skillet zucchini:

About 20 minutes before serving, in a 10-inch skillet over medium heat in hot salad oil, cook celery and onion until tender (about 5 minutes). Stir in remaining ingredients. Cook 10 to 15 minutes longer, stirring occasionally, until zucchini is tender-crisp. Makes 4 servings. Contains 75 calories per serving.
