Shrimp bisque
Ingredients/Components
- shrimp raw
- water - 1 gal
- diced onion - 4 oz
- lemon - 1/2 item
- 1/2 bay leaves - 1 item
- celery, diced - 4 oz
- butter - 8 oz
- flour - 8 oz
- milk - 2 qt
- sherry optional - 3 oz
- paprika
- salt and pepper to taste - 1 item
- garnish with croutons - 1 item
How to make shrimp bisque:
Make stock with water, lemon, celery, onions and bay leaf. Bring to boil and simmer 30 minutes. Add shrimp with shell; cook 10 minutes. Strain stock; hold back for soup. Peel shrimp. When cool, dice into small pieces. Keep for garnish of soup. Heat milk. Melt butter; add flour and paprika and cook 5 minutes over low heat. Add hot stock slowly until smooth. Simmer 20 minutes; add milk slowly. Add sherry wine and shrimp. Season to taste. Serves 24 people.Recipe categories: Soups & stews, Shrimp, Bisques/cream soups.
