Shoepeg corn salad
Ingredients/Components
- sugar - 3 Tbsp
- salt
- vegetable oil - 1/3 c
- red wine vinegar - 3 Tbsp
- chopped celery - 1/2 c
- chopped green pepper - 1/4 c
- diced pimiento - 2 Tbsp
- thinly sliced red onion - 1/2 c
- peeled and thinly sliced cucumber - 1 c
- can Shoepeg whole kernel corn, drained - 1 oz
How to make shoepeg corn salad:
Combine first 6 ingredients. Set aside. Combine remaining ingredients; stir well and pour over vegetables. Toss gently; cover and chill 8 to 10 hours. Drain. Yields 4 to 6 servings.Recipe categories: Vegetables, Corn, Onions.
