Seafood lasagna
Ingredients/Components
- pkg - 1 oz
- egg, beaten - 1 item
- grated Parmesan cheese - 2 Tbsp
- chopped onion - 1/2 c
- lasagna noodles - 1/2 lb
- shredded Mozzarella - 2 c
- cans cream of shrimp soup - 2 item
- sliced tomato - 1 item
- shelled shrimp - 1 lb
- cottage cheese can use low or no fat - 1 lb
How to make seafood lasagna:
Cook noodles, drain and pat dry. Cook shrimp in soup; add a little milk if too thick. Mix together cottage cheese, cream cheese, onion and Parmesan cheese. Spray 9 x 13-inch pan with cooking spray. Layer 1/2 of the noodles, 1/3 of the cheese mixture and 1/3 of the shrimp mixture. Repeat, ending with soup mixture. Bake at 350° for 30 minutes. Stop here if making ahead! Sprinkle 2 cups shredded Mozzarella cheese. Slice tomato on top and bake 20 to 30 minutes more until bubbly. Serves 4 to 6.Recipe categories: Pasta, Scallops, Lasagna.
