Ingredients/Components

  • pkg - 1 oz
  • celery, diced - 1 pkg
  • smoked sausage, cut up - 1 lb
  • hot sausage - 1 lb
  • large onions, diced - 2 item
  • shrimp, peeled, deveined and cut up - 2 lb
  • whole chicken, skinned - 1 item
  • chicken gizzards, cut up - 1 pkg
  • cans whole tomatoes including juice, diced - 2 item
  • whole crabs will have to be cleaned - 2 lb
  • crab meat add with shrimp
  • Seasonings:2 large green peppers, diced
  • pods garlic, diced - 6 item
  • gumbo file season to taste - 1 item
  • cayenne pepper season to taste - 1 item

How to make seafood gumbo:

Seasonings:2 large green peppers, diced1 pkg. celery, diced2 large onions, diced6 pods garlic, diced gumbo file (season to taste) cayenne pepper (season to taste) Skin chicken. Put in large stock pot. Cover with water about 2-inches above chicken. Let chicken cook until almost done (you can or cannot debone chicken). Add seasonings except salt, file and pepper. Cook for 15 minutes. Add the rest of the meat except shrimp, okra and tomatoes. Bring to a boil, then simmer for 30 minutes. When chicken is done, add shrimp, tomatoes and okra and cook until shrimp are pink. Test for doneness, then add the rest of the file, salt and pepper. Let stand 30 minutes for seasonings to go through.

Note: Refrigerate; never leave on stove or any warm place as spoilage will occur.
