Scandinavian fruit soup
Ingredients/Components
- sugar - 1/4 c
- water - 6 c
- dried apricots - 1 c
- light raisins - 1/4 c
- dark raisins - 1/4 c
- quick-cooking tapioca - 3 Tbsp
- pitted dried prunes - 1 c
- lemon, sliced - 1/2 item
- 4-inch cinnamon sticks - 3 item
- apple, pared and cubed - 1 item
How to make scandinavian fruit soup:
Combine all ingredients, except apple. Bring to boil, stirring. Cover and cook 20 minutes, stirring occasionally. Add apple cubes, simmer, covered, for 5 minutes. Remove cinnamon. Serve warm or cold as a dessert. Makes about 8 to 10 servings.Recipe categories: Fruit, Soups & stews, Scandinavian.
