Scandinavian fruit soup
Ingredients/Components
- sour cream - 1 item
- salt - 1 tsp
- dried apricots
- raisins - 1/4 c
- lemon - 1/2 item
- cinnamon sticks - 2 item
- ground cardamon - 1 tsp
- quick tapioca - 1/3 c
- currants - 1/4 c
- dried apples - 1 c
- dried prunes - 1 c
How to make scandinavian fruit soup:
Dice first 3 ingredients and cover in large pot with 10 cups of water and stand 30 minutes. Add the next 4 ingredients. Bring to a boil; stir and scrape bottom. Simmer, stirring 10 minutes. Add currants, raisins and salt and allow to cool. To thin, dilute with apple juice and serve garnished with sour cream. Makes 6 to 8 servings.Recipe categories: Fruit, Soups & stews, Scandinavian.
