Ingredients/Components
- margarine, melted - 1/4 c
- salt and pepper to taste - 1 item
- olive oil - 1/4 c
- chopped parsley - 2 Tbsp
- garlic cloves, minced - 3 item
- white wine - 1/2 c
- fresh lemon juice - 2 Tbsp
- chopped green onion or chives - 1 Tbsp
- large shrimp raw, shelled and deveined - 2 lb
How to make scampi:
Prepare shrimp and refrigerate.Mix remaining ingredients in a shallow bowl. Add shrimp and marinate about 1 hour in refrigerator, turning frequently. Line rimmed baking sheet with foil to preserve juices. Place shrimp with marinade on baking sheet and broil 5 to 7 minutes, turning once.
Be careful not to tear foil when turning. Serve over hot rice. Serves 6.
