Ingredients/Components

  • water - 1 c
  • Dijon mustard - 1/4 c
  • cans chicken broth - 2 1/2
  • bay leaf - 1 item
  • large onion, finely chopped - 1 item
  • can tomatoes - 1 1/2
  • dry lentils - 3/4 c
  • small carrot, finely chopped - 1 item
  • bulk Italian sausage - 1/2 lb
  • small green pepper, finely chopped - 1 item
  • large garlic clove, finely minced - 1 item

How to make sausage lentil soup:

In a Dutch oven, brown and crumble the sausage. Drain fat. Add the next 9 ingredients. Cover and simmer 1 hour or until lentils and vegetables are tender. Stir in mustard. Remove bay leaf before serving. Yield: 6 servings.
