Salsa chicken
Ingredients/Components
- eggs - 2 item
- flour - 2/3 c
- butter - 2 Tbsp
- water - 1 Tbsp
- vegetable oil - 1 Tbsp
- cornmeal - 1 c
- taco seasoning mix - 1/2 pkg
- chunky taco sauce - 1/2 c
- Monterey Jack cheese, sliced - 1/2 lb
- chicken breast halves, skinned, boned and pounded to 1/4-inch - 4 item
How to make salsa chicken:
Combine flour and taco mix in a small bowl. Beat eggs with water in another bowl. Dip each chicken piece in flour mix. Coat with egg, then roll in cornmeal. Refrigerate 30 minutes. Melt butter with oil in a large skillet over medium-high heat. Add chicken and fry until done (about 3 minutes per side). Transfer to baking pan. Top each chicken piece with 2 slices of cheese and 2 tablespoons salsa. Broil until cheese melts.Recipe categories: Chicken, Main dish, Poultry.
