  • water - 1 c
  • liquid smoke - 1 Tbsp
  • ground chuck - 2 lb
  • powdered garlic - 1 tsp
  • powdered onion - 1 tsp
  • peppercorn or ground pepper coarse - 1 tsp
  • Morton Quick tenderizer - 1 Tbsp

How to make salami:

Mix ingredients well. Wrap in a 12 x 14-inch size sheet of foil, shiny side out. Refrigerate 24 hours. Punch holes in bottom of foil and place on rack of oven. Bake for 1 1/2 hours at 325°.
