Ingredients/Components

  • salt - 2 Tbsp
  • vegetable oil - 4 Tbsp
  • warm water - 2 c
  • dark molasses - 6 Tbsp
  • yeast - 2 pkg
  • scalded milk - 2 c
  • unsifted rye flour - 4 c
  • anise seed optional - 1 Tbsp
  • sifted white flour - 8 10

How to make rye bread:

Add yeast to warm water. Let stand for a few minutes. Stir to dissolve. In mixing bowl, combine milk, salt, anise and molasses. Cool to lukewarm. Add rye flour. Beat until smooth. Stir in yeast mixture. Slowly blend in remaining flour until dough leaves sides of bowl. Turn dough onto floured surface. Knead 5 to 10 minutes or until smooth and elastic and does not stick when pinched with fingers. Cover with waxed paper, then a towel. Let rest 20 minutes.

Punch down and divide dough into 5 equal portions. Shape into round loaves. Place in greased round pans. Cover and let rise until double in bulk, about 1 hour. Lightly cut 3 times across top of loaf. Bake in moderately hot (375°) oven for 35 to 40 minutes. Brush top with melted butter.
