Ingredients/Components

  • salt
  • water
  • pepper - 1/8 tsp
  • cloves garlic, minced - 2 item
  • dry red wine - 1/2 c
  • bay leaf - 1 item
  • medium onion, thinly sliced - 1 item
  • thyme - 1/2 tsp
  • medium carrots, sliced - 3 item
  • bacon - 1/2 lb
  • whole allspice - 1/4 c
  • medium tomatoes, chopped - 2 item
  • medium egg noodles - 1 lb
  • butter or bacon drippings - 1/4 c
  • top round - 8 slices
  • dill pickle halves - 8 item

How to make rouladen:

Pound top round (halves if large). Roll pickle in meat and surround with bacon. Fasten with toothpick. Salt and pepper and brown in butter. Drain off excess fat. Add onion, garlic, carrots, tomatoes, allspice, herbs, wine, 1 cup water, salt and pepper. Simmer 1 hour. Remove meat and blend in remaining water and flour. Cook and stir until sauce boils for 1 minute. Reduce heat and return meat.

In the meantime, boil 1 pound egg noodles. Drain and butter. Pour meat and sauce over noodles. Enjoy.
