Ingredients/Components

  • graham cracker crumbs
  • sugar - 1/2 c
  • softened butter or margarine - 1/4 c
  • chopped walnuts - 1 c
  • semi-sweet chocolate pieces - 6 oz
  • whole egg - 1 item
  • eggs, separated - 2 item
  • rum extract optional - 1/2 tsp
  • heavy cream, whipped - 1 c
  • miniature marshmallows, cut in half - 1 c
  • grated chocolate for garnish - 1 item

How to make rocky road pie:

Blend together graham cracker crumbs, 1/4 cup sugar, butter or margarine and 1/2 cup nuts. Press firmly against bottom and sides of a 9-inch pie plate. Bake in preheated 375° oven for 8 minutes. Cool.

Melt chocolate pieces over hot water; remove from heat. Beat whole egg and egg yolks until foamy. Then beat into melted chocolate. If desired, stir in rum extract. Cool to room temperature. Beat egg whites until foamy. Gradually add remaining 1/4 cup sugar, beating until stiff peaks form. Fold whipped cream and beaten egg whites into chocolate mixture. Chill 30 minutes or until mixture mounds when dropped from a spoon. Gently fold in marshmallow pieces and remaining nuts. Mound mixture into pie crust and garnish with grated chocolate. Chill 1 1/2 hours or until firm.
