Roasted red bell peppers
Ingredients/Components
- chopped fresh parsley - 1 Tbsp
- olive oil - 2 Tbsp
- hot red pepper flakes - 1/2 tsp
- medium garlic cloves, minced - 4 item
- to 9 medium red bell peppers - 6 item
- to 4 anchovy fillets, chopped - 3 item
How to make roasted red bell peppers:
Place whole peppers on a baking sheet. Place under broiler, turning the peppers as the sides become charred. When all the peppers are charred all over, place in a sealed plastic bag and let steam for about 15 minutes.In a 10 to 12-inch skillet, heat olive oil. Add anchovies and garlic. Saute 1 minute. Do not burn the garlic. It will make the dish bitter. Add red pepper flakes; saute 1 minute. Remove pan from heat. Remove peppers from bag and the skin will peel away. Remove stems and seeds and slice peppers into 1-inch strips. Add all the sliced peppers to the skillet and toss together. Serve at room temperature with any Italian meal.
