Roasted potato salad
Ingredients/Components
- salt - 1/4 tsp
- pepper - 1/4 tsp
- sliced green onions - 1/4 c
- hard-boiled eggs, chopped - 2 item
- Miracle Whip - 1 c
- slices bacon, chopped and crisply cooked - 4 item
- quartered, unpeeled red potatoes - 4 c
How to make roasted potato salad:
Heat oven to 425°. Place potatoes in a 10 x 15 x 1-inch baking pan sprayed with nonstick spray. Bake 30 to 35 minutes or until potatoes are tender and golden brown. Mix all other ingredients in a large bowl. Add potatoes; mix lightly. Serve warm or cold. Makes 6 servings.Recipe categories: Salads, Potato, Vegetables.
