Ingredients/Components

  • sugar - 1/3 c
  • cinnamon - 1/2 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • milk - 2 c
  • nutmeg - 1/2 tsp
  • pinch of salt - 1 item
  • ginger - 1/4 tsp
  • raisins optional - 1 item
  • cooked rice - 2 c

How to make rice pudding:

Scald milk and cool. Beat eggs until frothy. Add sugar, spices and milk. Mix. Add cooked rice. If to be served with fruit, cook it plain, otherwise may add raisins, dates or a small can of drained fruit.

Put pudding in an ungreased 2-quart bowl. Set bowl in a pan of water and bake at 400°. Stir once after 1/2 hour, gently, so juice can get under rice. Put back in and let cook until just set so not liquidy on top and knife makes a light split (about 15 to 30 minutes longer).
