Rice pudding
Ingredients/Components
- sugar
- vanilla - 1 tsp
- milk - 2 c
- salt - 1/4 tsp
- egg whites - 3 item
- sifted flour - 3 Tbsp
- cream of tartar - 1/2 tsp
- egg yolks, slightly beaten - 3 item
- rice, cooked with 1/2 c - 2/3 c
How to make rice pudding:
In top of double boiler, combine sugar, salt and flour. Mix well. Gradually add milk. Mix well. Place over rapidly boiling water, stirring until mixture coats spoon. Pour a little of the hot mixture into beaten egg yolks, beating constantly. Add egg yolks to hot mixture in double boiler. Stir in rice and raisins; cook 2 minutes. Add vanilla. Put into baking dish.Beat egg whites until foamy. Add 1/2 teaspoon cream of tartar and beat until soft peaks form. Gradually add 6 tablespoons sugar and 1/4 teaspoon vanilla. Spread over rice pudding. Bake in preheated 350° oven until brown, about 12 minutes.
