  • sugar
  • vanilla - 1 tsp
  • milk - 1 c
  • salt - 1 tsp
  • water - 2/3 c
  • flaked coconut - 1 item
  • baking powder
  • egg - 1 item
  • shortening - 1/3 c
  • egg whites - 3 item
  • sifted flour - 2 c
  • cream of tartar - 1/8 tsp
  • Beat for 3 minutes on medium speed

How to make one egg cake:

Mix all ingredients together. Beat for 3 minutes on medium speed. Pour into two 8-inch cake pans. Bake in a 350° oven.Coconut Frosting for One Egg Cake:1 3/4 c. sugar1/8 tsp. cream of tartar2/3 c. water3 egg whites1 tsp. vanilla flaked coconut Cook sugar, water and cream of tartar until it spins a long thread. Beat egg whites until stiff. Continue beating while gradually pouring syrup into egg whites. Add vanilla and continue beating until thick enough to spread. Spread between layers and then sprinkle generously with coconut. Repeat with top and sides.
