Rhubarb pie
Ingredients/Components
- sugar - 2 c
- flour
- tapioca - 2 tsp
- sliced rhubarb - 4 c
How to make rhubarb pie:
Soak rhubarb in first 3 ingredients for 1/2 hour os so until well coated and saturated (no liquid needed!). Sprinkle a teaspoon or so of tapioca in bottom crust before adding rhubarb mix. Dot with a few pats of butter then add top crust with air slits. Bake at 400° for 10 minutes, then at 350° for additional 30 to 50 minutes.Hint: Put foil around edge of crust for first 20 to 30 minutes to keep from over browning.
