Ingredients/Components

  • sugar - 1 c
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • cornstarch - 2 Tbsp
  • water - 1 c
  • melted butter - 1/2 c
  • flour, sifted - 1 c
  • brown sugar, packed - 1 c
  • uncooked oatmeal - 3/4 c

How to make rhubarb crunch:

Press half of crumbs in a greased 9-inch baking pan. Add 4 cups diced rhubarb. Combine second mixture and cook until thick and clear. Pour over rhubarb. Top with remaining crumbs. Bake at 350° for 1 hour. (May top with whipped cream.)
