  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • flour
  • brown sugar
  • soda - 1 tsp
  • margarine - 1/2 c
  • sour milk or buttermilk - 1 c
  • or more cut up rhubarb

How to make rhubarb cake:

Cream the first 3 ingredients. Add remaining ingredients except rhubarb and beat 2 minutes. Add rhubarb. Place in a greased and floured 9 x 13-inch pan. Sprinkle top of batter with 1/2 cup sugar and 1 to 1 1/2 teaspoons cinnamon mixed together. Bake at 350° for 30 to 35 minutes.
