Rhubarb cake
Ingredients/Components
- sugar
- vanilla - 1 tsp
- flour - 2 c
- soda - 1 tsp
- pinch of salt - 1 item
- shortening - 1/2 c
- beaten egg - 1 item
- sour milk - 1 c
- rhubarb, finely diced - 2 c
How to make rhubarb cake:
Preheat oven to 350°. In a bowl, cream together the sugar and shortening. Add eggs, vanilla and salt. In second bowl, mix soda with some milk, then add 1 cup diced rhubarb. Add to sugar mixture. Blend together well. Pour into greased and floured cake pan. In second bowl, mix together other half of the rhubarb, 1/4 cup sugar and 1 teaspoon cinnamon. Spoon over top of cake.
