Ingredients/Components
- sugar - 2/3 c
- eggs - 2 item
- salt
- flour - 7 7
- lukewarm mashed potatoes - 1 c
- margarine, butter or shortening - 2/3 c
- lukewarm potato water *
- or 1 cake yeast, crumbled - 1 pkg
How to make refrigerator rolls:
*I start with 2 cups of water to be sure I have 1 1/2 cups when needed.Mix potato water, sugar and salt together with yeast. Stir until dissolved. Add eggs and margarine, butter or shortening; stir in mashed potatoes and flour. Knead until smooth. Grease bowl, turning once to grease top. Cover with plastic and secure; place in refrigerator 2 hours to chill (dough can be kept in refrigerator 3 to 4 days at this point). When ready to bake, shape into rolls. Let rise until double (1 1/2 to 2 hours). Bake for 10 to 11 minutes at 350°.
