Ingredients/Components
- sugar
- eggs - 2 item
- vanilla - 1 tsp
- vanilla extract - 1/2 tsp
- salt - 1 tsp
- flour
- cocoa - 2 Tbsp
- buttermilk - 1 c
- baking soda - 1 tsp
- vinegar - 1 Tbsp
- shortening - 1/2 c
- red food coloring - 2 oz
- finely grated orange zest - 1/2 tsp
- Add eggs and beat well
- unsweetened pineapple juice concentrate - 5 Tbsp
How to make red velvet cake:
Cream the shortening with the sugar. Add eggs and beat well. Make a paste of the cocoa and food coloring. Add to creamed mixture. Sift flour and salt twice. Add buttermilk alternately with flour to creamed mixture. Add vanilla. Put vinegar in deep bowl. Add soda (it will foam). When blended, add to creamed cake batter. Do not beat batter, just blend well. Grease and flour two 9-inch cake pans. Pour batter into pans and bake at 350° for 25 to 30 minutes.Cream Cheese Frosting:8 oz. light cream cheese (room temperature)5 Tbsp. unsweetened pineapple juice concentrate1/2 tsp. vanilla extract1/2 tsp. finely grated orange zest Place ingredients in bowl.
