- eggs - 2 item
- vanilla - 1 tsp
- chopped pecans - 1 c
- salt - 1 tsp
- flour
- coconut - 2 c
- cocoa - 2 tsp
- buttermilk - 1 c
- baking soda - 1 tsp
- vinegar - 1 tsp
- shortening - 1/2 c
- stick butter - 1 item
- box powdered sugar - 1 lb
- red food color - 2 oz

How to make red velvet cake:
Mix baking soda and vinegar. Sit a minute. Add cocoa and red food coloring, then set aside. Cream shortening and sugar. Add eggs, vanilla and buttermilk; mix. Add flour and salt. Mix. Add red mixture. Mix. Pour into greased floured pans. Bake for 30 minutes at 350°.Red Velvet Cake Frosting:1 (8 oz.) cream cheese1 stick butter1 lb. box powdered sugar1 c. chopped pecans2 c. coconut1 tsp. vanilla Cream butter and cream cheese. Add powdered sugar and vanilla. Mix well. Add pecans and one cup coconut and mix. Spread on a cool cake. Sprinkle one cup coconut around cake.
