How to make red velvet cake:
Cream shortening and sugar. Add eggs, coloring, water, vanilla and salt, mixing well after each. Add a mixture of the soda and vinegar. Add sifted flour and buttermilk alternately. Bake in 2 (9-inch) layer or 9 x 13-inch loaf pan at 350°. Cool and ice with Vanilla Cream Cheese Icing.Vanilla Cream Cheese Icing:1 (1 lb.) box powdered sugar1 (8 oz.) cream cheese1/2 c. oleo2 tsp. vanilla1 c. chopped pecans (optional) Have all ingredients at room temperature.
