Red beans and rice
Ingredients/Components
- salt - 1 tsp
- oil - 1 tsp
- chopped onion - 1 item
- cloves garlic, minced - 2 item
- cayenne - 1/4 tsp
- stalk celery, chopped - 1 item
- chopped bell pepper - 1 item
- red kidney beans - 1 lb
- bunch chopped scallions - 1 item
- chopped sausage - 1 lb
How to make red beans and rice:
Rinse beans. Optionally, soak them overnight. Put all ingredients in a large pot and add enough water to cover twice. Bring to a boil and lower heat to simmer. Cover pot and cook about 3 hours until beans are soft. Add oil and cook another 1/2 hour. Serve over steamed rice with plenty of butter and French bread.
