Raisin oatmeal cookies
Ingredients/Components
- sugar
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- flour
- water - 1 c
- soda - 1 tsp
- baking powder - 1/2 tsp
- shortening - 3/4 c
- raisins - 1 c
- rolled oats - 2 c
- cloves - 1/2 tsp
How to make raisin oatmeal cookies:
Simmer raisins in water over low heat until plump (20 to 30 minutes). Drain raisin water into measuring cup and add water to make 1/2 cup. Mix shortening, sugar, eggs and vanilla. Stir in raisin-water. Stir in flour, baking powder, soda, salt and spices; add rolled oats, nuts and raisins. Drop onto ungreased cookie sheet and bake 8 to 10 minutes.Coconut can be substituted for raisins.
