Ingredients/Components

  • pkg - 1 oz
  • salt - 1/4 tsp
  • pepper - 1/8 tsp
  • dried oregano, crushed - 1/2 tsp
  • chopped onion - 1/4 c
  • can tomatoes, cut up - 1 1/2
  • bay leaf - 1 item
  • ground beef - 1 lb
  • beef broth - 4 c
  • dried marjoram, crushed - 1/2 tsp
  • cubed, peeled potato - 2/3 c

How to make quick vegetable beef soup:

In a large Dutch oven or kettle, cook beef and onion until beef and onion are tender. Drain fat. Stir in beef broth, mixed vegetables, undrained tomatoes, potato, celery, marjoram, oregano, salt, pepper and bay leaf. Bring to boil; reduce heat. Cover; simmer for 15 to 20 minutes or until vegetables are tender. Discard bay leaf. Makes 4 main dish servings.
