Quick chicken casserole
Ingredients/Components
- salt - 1/2 tsp
- water - 1/4 c
- lemon juice - 1 Tbsp
- pepper - 1/4 tsp
- mayonnaise - 3/4 c
- finely chopped onion - 2 Tbsp
- diced, cooked chicken or turkey - 1 c
- sliced celery - 1 c
- hard-boiled eggs, sliced - 3 item
- crushed potato chips - 2 c
- can cream of chicken or cream of mushroom soup - 1 item
How to make quick chicken casserole:
Saute onion and celery in butter. Combine chicken, celery, onion, nuts, rice, chicken or mushroom soup, salt, pepper and lemon juice. Mix mayonnaise with water; add to chicken mixture. Gently stir in eggs. Turn into greased 9-inch square pan. Bake at 450° for 15 minutes or until bubbly.
