  • sugar - 1 c
  • cinnamon - 1 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • chopped pecans - 1/2 c
  • milk - 2 tsp
  • salt - 1 tsp
  • flour - 3/4 c
  • nutmeg - 1/2 tsp
  • baking soda - 1 tsp
  • pumpkin - 2/3 c
  • powdered sugar - 1 c
  • ginger - 1 tsp
  • soft margarine - 2 tsp
  • Add pumpkin and sugar

How to make pumpkin roll:

Beat eggs. Add pumpkin and sugar. Mix in dry ingredients; add to mixture. Grease cookie sheet with lard or Crisco. Line with wax paper and grease again. Coat both sides of wax paper. Pour batter onto prepared cookie sheet. Sprinkle top with nuts, if desired. Bake at 375° for 15 minutes. Turn cake out on a towel. Cover tea towel with powdered sugar so will cover cake area. Roll with towel; let stand for 10 to 15 minutes.Filling:8 oz. cream cheese1 tsp. vanilla1 c. powdered sugar2 tsp. soft margarine2 tsp. milk Blend ingredients together. Spread on unrolled cake. Re-roll and wrap in plastic wrap. Wrap again in foil and refrigerate. When preparing to serve, unwrap from foil onto towel sprinkled with powdered sugar.
